| if i'm not wrong thew use both pork and beef minced (kimas) and some other spices olive oil and i prefer the fire stove to cook my bifteki. next time you will come i will bbq for you at Olgas resintence at Halkidiki (kalitera den exei)(like here nowhere) where you can see Olimpos mountain from the balconi and the sea by your feet |

| LoL ( can't post Smilies )!!! I have in mind a few quick, easy and tasteful recipes. 1) Tomatoes and eggs 2) Beef with eggpants and tomatopaste 3) Peas and chicken (yeap with tomatopaste) Check with Menos Aniko and tell us if you or he would like any of these.

| Ok then! Let's start with the first! 1) Tomatoes and eggs Ingredients (for 2 persons): 3 tomatoes, chopped or minced, 4 large eggs, a wine glass with olive oil, little dried basil or oregano (or whatever we prefer) salt and pepper. Instructions for preparation: Chop the tomatoes (or grind) and put in a nonstick pan in order to to boil and drink their fluids, but not to completelly dry (this will aproximatelly take about 20 min after they start boiling). Stir them fronm time to time. Then add the olive oil, basil, salt and pepper and give the sauce a couple of boils for about 5 min. At the end put the eggs and let them cook with the lid closed as much as to become juicy. You can either out the eggs without breaking them or alternatively you can break them in a bowl and stir them a bit before adding them to the sauce. | 2nd Recipe Veal with eggplants Ingredients (for 2 persons): 1-1/2kg veal meat cut into big pieces 1 medium onion, grated 1kg fresh ripe tomatoes 1 cup olive oil 1 teaspoon of sugar 1/2 cup chopped parsley 2kg eggplant (preferably the long kind, but any will do) 1 1/2 teaspoon of salt pepper Instructions for preparation: First clean and wash both the meat and the eggplants. I suggest to wipe the eggplants well, so they don't have any water on them. Cut the eggplants, without peeling them, into large rings about 3cm high. Slightly salt them and leave them be for the moment. Put the oil in a frying pan over high temp to heat up. Put the pieces of the veal in the frying pan, and fry them until they have a dark gold colour on all sides. So stir them properlly. When ready, take all pieces of meat out of the frying pan and into a pot. Then fry in the same frying pan the chopped onion. We want this to have a gold colour as well, but not burnt. So 2-3 min will do the trick. After that, put the fried onion in the pot above the meat. Try to leave as much of the oil as possible in the frying pan, cause later on, we are going to fry the eggplants in it. Put the chopped tomatoes, sugar, salt, pepper and the parsley in the pot, along with the meat and onion and close the lid. The fluids in the pot must be about 2cm above the meat, so depending on how much juice you got from the tomatoes, see if you have to add a little bit of warm water. Let them boil for 1 1/2 hours (if the meat is a far cousin of the beans, maybe 2-2 1/2 hours will be enough ). In the meantime lets deal with the eggplants.Yeap! Now fry the eggplants. We want them to have a light brown colour in all sides. Stir them with caution. We don't want you to get burnt, so lower the temp a bit. After you're done, once again leave them in peace until the veal is cooked for this 1 1/2 hours. Then open the lid and place the fried eggplants on top of the rest, and let the whole thing boil for another 1/2 an hour. Now there mustn't de lot of water in the pot and this food must have remained with it's oil. Turn off the heat and serve! Again some photos from the net This looks like a very good veal, nicely cut. | Wow with pictures.... great idea. Well next week I´ll try both. on saturday we met a greek here ^^ and he cooked something close like with the eggplant but no eggplant but instead tomatoe sauce and tasted like cinamon :] woooow the meat was soo soft. Do you know what it is? |

| Well Ani, I believe it was "Tas kebab". Didn' it had something to go with? Like rice or mashed potatoes or spaghetti or something else? The secret when cooking meat is the low heat. Cook it slowly, give it the hours it needs and don't add all the time water in it. This is something that comes along with experience. Calculate the fluids and close the lid until it's ready. I myself ruined tons of meat before succeeding. Of course you must buy the tender parts of veal, not all is the right for all recipes. Good luck and we're expecting results |
